At Maltasugiyo Co., Ltd., we switched to partial brine thawing due to issues with our long-used thawing machine. However, since the volume of thawing was large, it was necessary to mix occasionally to avoid uneven thawing, which required us to come to work early in the morning and monitor the thawing closely. Therefore, we decided to introduce our thawing machine, as it seemed to offer good thawing quality and usability. After the introduction, the burden of running water thawing was eliminated, significantly improving work efficiency. Additionally, we were able to thaw without damaging the texture, keeping it intact and looking good.
